Turkey Sandwich with Lemon Aioli
Ingredients
- 2 slices of your favorite bread (ciabatta, sourdough, or multigrain work great)
- 4–6 thin slices roasted turkey breast
- 2 tablespoons crumbled feta cheese
- 1 tablespoon grated parmesan cheese
- 2–3 tomato slices
- 3–4 cucumber slices
- A few fresh basil leaves
- A small handful of shredded lettuce
- A few thin shavings of red onion
- Lemon Aioli (recipe below)
- Optional: olive oil or butter for toasting
Lemon Aioli Sauce
Ingredients:
- ½ cup mayonnaise
- 1 tablespoon fresh lemon juice
- ½ teaspoon lemon zest
- 1 small garlic clove, minced
- ½ teaspoon Dijon mustard (optional, for depth)
- Salt and black pepper to taste
Directions:
Whisk everything together until smooth and creamy. Taste and adjust seasoning—more lemon if you want it zippier, more salt for balance. Chill until ready to use.
Assembling the Sandwich
- Toast the bread (optional):
Lightly brush with olive oil or butter and toast until golden for a little crunch.
- Layer it up:
Spread lemon aioli on both slices of bread. Add turkey, feta, parmesan, tomatoes, cucumbers, red onions, basil, and shredded lettuce.
- Press & serve:
Close the sandwich gently and slice in half. Serve fresh or wrap it up for a perfect picnic-style lunch.
